Aroma: Caramel sweetness, light roast warmth, dark cocoa.

The cup opens smooth and sweet, moves into a steady nutty middle, and lands with a darker cocoa/chocolate finish that lingers without getting heavy or bitter.
Origin & Roasting
Origins: a multi-origin base (Colombia, Guatemala, Indonesia/Sumatra) paired with 100% Colombian Excelso components.
Coffee type: 100% Arabica
Quality: All our coffees meet 80–84 points on the SCA scale and are sold as Specialty (80+), using green coffee kept within one year from harvest and 10–12% moisture.
Import partner: Avanti Gourmet Coffee, Winnipeg.
Roasted in Saskatchewan on an Italian Officine Vittoria double-drum roaster in approximately 100 lb batches (yielding about 80 lb roasted). Roast time typically runs 6–10 minutes depending on profile. After roasting, coffee is cooled quickly with air and a light water mist, rested 24–48 hours to degas, and packaged when it’s roughly 48 hours off roast.
